Paleo Diet Day 21: Three-Week Anniversary + Raw Nanaimo Bar! (recipe with pictures included)

As you all just read, this starts Week 3 of my excellent Paleo adventure. The meals were fairly simple: breakfast = coconut yoghurt & almonds & tea; workout at the gym with weights; lunch - ham, sprouts; afternoon coffee and banana with almond butter; supper = red cabbage, the rest of the ham, followed by almonds and macadamia nuts.

BUT - in response to a request from a reader for the recipe for the raw Paleo nanaimo bar - my daughter made it again, this time taking photos and writing down a basic recipe, both of which I will share.

Ingredients: 1 cup ground pecans or walnuts; 3 Tbs cacao powder; 4 Tbs xylitol

Blend @45 seconds or until smooth in food processor:


To make the cream bottom (listed as "optional"): 1/2 cup coconut yoghurt, 2 tsp. arrowroot powder. Mix on medium heat, stirring continuously until it is pudding-like:



Now the instructions kind of fade out (or the sticky notes disappeared) so I'll ad lib: set out a layer of coconut flakes:

Drizzle on the cream:



Mix in the filling:



Lift the wax paper so that the coconut flakes cover the top:



And the final masterpiece! emoticon

Let cool in the 'fridge for 5 minutes. Enjoy!

Total preparation time was about half an hour. Total survival time of the nanaimo bar was about eight hours. I just finished the last bite. A short life but long to be remembered for making the ultimate sacrifice! emoticon

    OH yum and not sure why I haven't seen you before but going back to read our paleo adventure as I have done primal paleo 2x before but both times were when i was having such bad pain issues I found it hard to think let alone try too hard. Starting again and have some other reasons too to keep on going.
Thanks for the recipe and motivation.

    Update on the recipe: my daughter adds that it's actually easier if you just drizzle the pudding on top of the nut mix on a base of coconut flakes; then put more flakes on top, then chill in the refrigerator. More practical, still tasty. emoticon
