I have all my breakfasts and lunches planned and made for the whole week! What a great feeling! I'm trying something new.... eating the same thing for breakfast and lunch every day. I'm not crazy about it.... but it will be easy to stick to, lean, and high in protein. For breakfast: whole wheat bun with southwestern egg beaters, turkey bacon, spinach, and tomato. Total including coffee creamer: 276 calories. Lunch is 4oz chicken with black beans, salsa, green chiles, and taco seasoning with mixed vegetables on the side for a total of 260 calories. This should leave plenty of room for snacks of apples, string cheese, and baby carrots along with various dinners. Hopefully all this prep work will pay off!
