It's been a difficult emotional week for us, and I couldn't find it in me to come up with anything too creative, but we really needed something fun. So I made up a spelt pizza dough [so easy in a food processor] and had the idea of a pizza decorated like a Christmas tree! I got everything started---first the sauce.
Then I topped that with a mixture of finely chopped kale and Daiya mozzarella. A LOT of kale!
Then Garry took over and did the decorating! The "garland" was peppers and red onion pieces, the "ornaments" were rounds of soy pepperoni. I don't think it shows in the photo but he even cut one of the pepperonis into a star for the top of the tree---cute! Okay, so maybe it doesn't look like a tree so much as a single huge slice of pizza, but work with me!
It was delicious, and the kale was so good. Can't get enough greens!
