Meal plan!

Been pretty on track a whole 2 days now...yes that was sarcastic. Still, two is better than none, I just gotta keep pressing on. As I've mentioned before, I don't really enjoy cooking and I find planning a hassle, I like to have the flexibility of eating what I'm in the "mood" for. Regardless, I know this is good for me and will help with my goals, so here it goes! My dinner meal plan for hopefully the next two weeks:

Tonight/Friday: Organic flatbread pizza (portabella mushroom & goat cheese) with a side salad
Sat: Stuffed chicken with goat cheese & sundried tomatoes (a Spark recipe that does NOT taste like it should be healthy-highly recommend it!) over a bed of arugula
Sun: Thai ginger swordfish with a salad and/or steamed veggies
*Sunday depending on how ambitious I'm feeling I'll also make a roasted vegetable soup and/or breakfast quinoa for lunches/breakfasts during the week
Mon: Chicken piccata over kale
Tues: Maple turkey tenderloins with glazed carrots
Wed: mango coconut mahi-mahi with a salad and/or steamed veggies
Thurs: cranberry turkey meatballs with a salad and/or steamed veggies
Fri/Sat: we usually go out one of these days, I'll try to be good
Fri/Sat: home-made light cream of chicken casserole/soup
Sun: lemon-pepper tilapia with a salad and/or steamed veggies
*Sunday I will also bake a veggie quiche that freezes easily for lunches
Mon: pork tenderloins baked with apples
Tues: white chili with shrimp
Wed: honey balsamic chicken with a salad and/or steamed veggies (likely lightly sauteed green beans)
Thurs: baked cajun tilapia with a salad and/or steamed veggies

Happy almost weekend everybody! I'm excited, I'll be Christmas decorating this weekend emoticon emoticon emoticon

    Yum! Everything sounds delicious! Way to go on planning all of this! Like you, I have an aversion to "planning" my meals. I'm still learning how to cook, as it is, so just planning ONE meal is overwhelming for me sometimes. emoticon Hope it all goes well!

    Wow, I'm impressed for someone that doesn't like to cook or plan you did a great job!

I have a menu/organization board in my kitchen and I just list several meal ideas on it, not necessarily on any certain day that way I still feel flexible.

    Good for you in committing to a meal plan. Your right it is hard to plan ahead because of the fact that you don't really know if that is what you will feel like eating! I eat the same way. What sounds good at the moment during the day. But for dinner I usually plan family meals at least a week ahead of schedule. Though if it doesn't sound good anymore I do change it at the last minute too!

    Also, since you mentioned liking flexibility, don't lock yourself into having chicken picatta on Monday just because you planned it then. You can always switch the next day's dinner to fit your taste or schedule changes.

    Wow! Your meals sound like they could/should be in restaurants! I'll definitely check out some of those recipes.

    They all sound delicious! If you can't be bothered to put effort into the soups, you can buy prechopped veggies and sauté them in the stock pot in olive oil for a few minute and then tossing in the water and ignoring it for a few hours. Safes time and effort. Not quite the same flavour as roasted, but still yummy!
