Tuesday's Toast & Tough Decision!

Hi all! Another cold, windy day, working out at home. I am hoping my elliptical holds up. Waiting for a call back from a repair person for it. I could not get into to see the surgeon who did my left hip until January 8th. Long wait there. I hope all these painkillers last that long. My scooter will be picked up tomorrow and if he has the right parts in stock for it, will bring it back the next day! There is some question because its eight years old and things may have changed since then. Not that it matters as the weather will be too nasty to use it for the next while anyway.
Mom suggested I lay off the raw veggies for a while. So I cooked everything yesterday and today. Still runs, but not so much gas and not more than once a day.
I have a dilemma. I bought egg whites on sale and unfortunately have three unopened cartons left that are now past their best before date. I researched the differences on use before, packaged on etc., etc. and the consensus was I could still use them, but taste, texture and looks might not be the best. If it had said use by, I would have had to toss them because that would be a safety issue.
Has anyone had any experience with this? I so hate to waste things, but I don't need any more excuses for my tummy to get worse either.
I had another lousy game in bridge today, the worst being two absolute bottom hands against my nemesis, one because I was too asleep and missed my partner's opening bid :(
We were dead last. So very frustrating.
Another home workout tomorrow and hopefully, a bright spot that I may go with Mom to the Festival of Trees at our local museum. Keeping fingers crossed. She won't drive anywhere if the weather is bad.

    Would your egg whites cook up into a nice batch of meringue-type cookies, say with ground hazelnuts or almonds in them? Then they'd be thoroughly cooked and "keep" for a bit . . .

Hope your elliptical and scooter get fixed quickly . . . and your tummy too. What a long bout of discomfort.

    My sister says you can go past the due dates. I once saw a show that said so long as they are refrigerated they last longer, but not much. I am the egg queen, love love them so I would chance it.

Hope the elliptical pulls through for you, we need it when it is too wet to hike, don't we.

    I don't worry much about expiration dates, but I have a cast iron tummy. You may need to be more choosy....I am personally convinced that most of those dates are pure marketing...Yes, I am cynical (and cheap).

Oh wow. My heart goes out to you. I recall those days of no sleep and they are misery. I just got something and I really do think it is working. In health food stores you can get something called "Badger Balm" and it comes in a bunch of different varieties. The one I just got is the "Sleep BAlm" and I rub it on my temples and under my nose. I would swear that I've been falling asleep much faster and sleeping much more deeply since I began to use it.Can't hurt. If you can't get it in a store, try looking online. I'm sure you can order it.
As for the tummy. Yeah. Probiotics sound like the way to go.
I hope you get some relief and I hope something comes your way to brighten your life a bit. HUGS.

    FYI==The reason your eggs say best by instead of use by, it they are pasturized. It makes a lot of difference in their dates. You can freeze them and use them later, also.

    emoticon emoticon That's a hug for you in hopes that things will get better soon. I know it must be so frustrating right now, and being exhausted from lack of sleep doesn't help with anything at all! One thing I thought of that might help your stomach, and I don't know if you can get it there, but it's called yakult. It's a little plastic canister filled with liquid that looks to me like a darker colored skim milk! It tastes pretty good, but the real benefit of it is the compacted huge amount of probiotics it contains. I have been drinking it for two+ years now to help my tummy/and keep it immune from stomach virus. Actually had a friend with chronic diarrhea for over two months. The doctors kept giving him antibiotics that weren't fixing the issue; he did the yakult for four days and resolved the problem. It's good stuff. As far as the sleep, I have been taking calcium/magnesium supplement and an herbal supplement called "Power to Sleep, PM". I have already noticed a pretty big difference. Haven't had a migraine in nearly two weeks and sleep is steadily getting better. I am sorry to hear you have to wait so long to get your hip checked on. It's frustrating to wait on doctors, especially when you are in such excruciating pain. emoticon Anyway, as always, you are in my thoughts. I really do hope things get brighter for you. And hope the elliptical holds up for you too. emoticon emoticon

    not sure about the egg whites either. here in Mexico we have to get our egg whites the old fashioned way.... separate them

    Wow, so much happening in your life right now, Linda! Hope you have relief from the pain for as long as it takes to see your doctor.

As for the egg whites, perhaps you could make a veggie frittata or two and freeze them.

    Can't help with the egg white.

I am wondering whether your system just can't comfortably process raw food anymore. It may be a good idea to stick with cooking your veggies for a while longer to see whether the improvement continues. :-)

    I looked up the egg information too...here is what they said at the egg safety website:
"As long are they are kept refrigerated at 45 °F or lower, fresh shell eggs are safe to be consumed four to five weeks beyond the carton’s Julian date. Egg cartons with the USDA grademark must display a “Julian date,”* the date the eggs were packed. The Julian date is usually found on the short side of the carton and represents the consecutive days of the year with the number 001 as January 1 and December 31 as 365. Although not required, cartons may also carry an expiration date (EXP) beyond which the eggs should not be sold, but are still safe to eat. On cartons with the USDA grademark, this date cannot exceed 30 days after the eggs were packed in the carton".
I don't know how Canada marks them, but usually I use them after the sell by date about a week, which is for the store anyway. Use by, I will not use them past that. You should be ok. But, it is up to you. I will hard boil them all if I don't use them and then I feel better about it.
I hope those stomach problems you have is not something real serious- you poor girl! Have you taken any new meds...that is usually what happens to me when my body doesn't like them! Hang in there! emoticon
