My husband made jerk-style chicken breasts on the grill the other day. I didn't really care for them. So I dressed up the leftovers to try and make them fun.
I spread a tablespoon of low-fat cream cheese on a whole wheat sandwich thin, then added a half-tablespoon of strawberry-rhubarb spreadable fruit. I heated up the leftover chicken separately, cut it into strips, and added it to the sandwich.
Super yummy! It had spicy, meaty, sweet, creamy, bready, and finger food all going for it. 250 calories, less than 6 g of fat, low sugar, good fiber, and high protein. Woo hoo! Hubby can make that chicken whenever he wants. I've got a new fun food.
