I had a very good time in Cuba (Cayo Coco)... We came back last Thursday.
For this first "Cuba" blog, I will focus on food!
I enjoy tasting and trying new food... and when I travel I don't want to stress about counting (especially in front of a buffet!)... I think I made healthy choices - but I ate way too much! ... that is what the scale is telling me at the moment!
Yeah ! I took picture of my food! I wish I had their recipe to share - it was sooooooo goooood! Here is some of the special dish that I tried...
Salmon and shrimp on cucumber with vinaigrette....
This is the best fish I had ever! Serve with creamy orange sauce, warm olives and carrots. Delicious!!!
We went on an excursion with the kids to the city of Moron and had a typical lunch at a local restaurant. The main dish was rice with black beans (very tasty!), plantain chips and pork. Maggie and I loved the chips! We shared Emma's... and the desert was a mango puree... very very sweet.
and finally - I enjoyed the fresh veggies and smoke salmon at the lunch buffet.
Back home, I am now back at tracking and staying within calorie range. I need it. I felt so bad (physically uncomfortable) after one week of overeating that I just did not want to eat anymore!
I am happy to be back in my kitchen... cooking makes me
tracking too... that way I know that I can indulge without busting my cal count!
Inspiration from our trip - I felt like eating light... so I made a Veggie fish soup.

For 61 cal, Fat: 2.5 g, Carbs: 5.8g and Protein: 4.9g... Who wants soup?

The answer? When tempted with the coffee special "Add an extra muffin for 10 cents..." my cake is the best option... Despite the 245 cal, fat: 5g , carb: 50g, protein: 2.4g and Sugar: 33 g ... it is still better than my Timmy Muffin temptation with Cal: 410, Fat: 15 g, Carbs: 61g, protein: 5g, fiber 2g and sugar 36gr... I am grateful for tracking and I save my craving for my treat of the day!
Actually, I like it better too (note: I substituted the oil with home made pumpkin puree so it is not oily) and I like the addition of sliced apple. to make it healthier, you can omit the caramel sauce...
My favorite recipe this week is my Shanghai Bok Pumpkin Salad... I had it as a side dish for pasta tonight and I will have more tomorrow (for lunch!)...
I love my pumpkin... so much that I chopped it very thin and add it to the chinese lettuce and other veggies for this creation! The dressing is a simple mix of Plain Fat Free yogurt and Apple cider with fresh chopped dill. Only 33 cal per serving! recipes.sparkpeople.com/
