This was the first year I made a Thanksgiving dinner. It was teeny weeny (it was just me, my boyfriend Matt and my BFF Maggie who drove down to spend the weekend with us.) It was so great!
I made a turkey, a 9 pound "Lil Butterball" who came out amazing. Brined him and rubbed melted butter and herbs all through him and cooked him breast-side down. He was so juicy and tender and the meat was falling off the bones. Success!
We also had cornbread stuffing, crescent rolls, applesauce, veggies and hummus, pecan pie and pumpkin cheesecake.
Matt asked me to make a pecan pie and Maggie was very excited too because she never gets pecan pie. I had never made one but I was pleased to find out how easy it is. I don't like it (I don't like syrup- corn, maple, chocolate, or otherwise. Syrup to me is just gross). They told me, however, that it was amazing. :)
My pumpkin cheesecake is what got me to like pumpkin :) It is so good and stupidly easy. Every time I make it I wonder why I don't make it all the time. Then I inhale 3 pieces and remember why I don't make it all the time :)
We lounged around and had a Harry Potter movie marathon, and Friday Maggie and I went and painted pottery for Christmas presents. I did get some workouts in, but Maggie isn't used to working out in the cold temperatures and had some trouble. I did a Crossfit Thursday morning and ran HIIT sprints at the trail Friday. I am soooooooooooo sore from sprints... my legs and abs are killing me. It's pretty fantastic :)
I had an amazing weekend but I have to say I am looking forward to getting back to a routine. I do love routine.
I have learned all 500 of my GRE vocab flashcards (and it only took me exactly one week- in this case I am thankful for my brain's particular skills for language and memorization) and this week I suppose I have to review my math skills... boo. My GRE looks much more real on this side of Thanksgiving. I take it December 17.
Well, that's all that's new here. I think I'm going for a walk. Hope everyone's Thanksgiving was awesome!
