Well we had a feast here at the house earlier today. My husband always does a fried turkey and if I stick to the white meat with out the skin then the fat content is not more. So while I had the kitchen to my self this morning I decided to experiment with the two baked sweet potatoes I had.
I read many recipes so by no means is this an original idea. I took the sweet potatoes skinned them and chunked them; mixed with zested organge rind and orange sections cut up; mixed with a couple tablespoons of brown sugar and some cinnamon, nutmeg and ground ginger. Put it all in an oiled dish and microwaved it till warm.
