Gettin' in the greens

I actually enjoy greens quite a bit. This was a pretty big change for me, as I swore off greens after my time living in Georgia. The collard greens they served with the school lunches had been boiled to within an inch of their lives, and no amount of butter or salt was going to make that stuff palatable.

Many years later, when I found out that spinach comes in bunches, not frozen blocks of mush waiting to happen, I learned to like greens much better.

Now I look forward to growing beets in our garden, not just for the beets, but for those yummy greens. We go through a lot of spinach and learned to eat chard from, of all places, the Princess's turtle, Shelly. This weekend, I bought a big bunch of kale and added some to our homemade minestrone soup on Saturday. It was good, and good for ya! I think the rest may be destined for some kale chips. Wouldn't that be a good snack to put out on Thursday while waiting for the turkey to finish roasting?
