Ah, the other day I seem to remember blogging that I was quaking in my boots because I was afraid of what would happen if I partook in a certain potluck dinner that I was supposed to attend on Thursday.
Well as fortune would have it, I’m lucky. I guess even though it really was quite impossible to track the calories for that day the way I hoped, I survived it and even lost some weight.
Goodbye 350s, hello 340s!
So I guess that the world doesn’t come to an end when calories can’t be tracked. What’s important is that I’m tracking them again and that I was careful that day so that I wouldn’t get myself in trouble.
The only other food I ate that day was a bowl of Go Lean Crunch and a banana. That’s all I could handle anyway. It turns out that it takes a lot less food now to fill me up. I was quite satisfied after I was done eating that night.
It turns out my meatballs were a hit too. Thanks to Better Homes and Garden’s Diabetic Living publication anyway, it was their recipe. I merely followed it.
They were major kick-butt meatballs though! Such an easy recipe too! I’m not sure if it was the recipe or that it was made in a Crockpot creating a depth of flavor, or both. I’m guessing both.
The sad thing, I got only three meatballs! After the group was done, my mom loved them so much I gave her all the leftovers!
I guess that’s okay, I have more ingredients at home, and maybe I shouldn’t be making something so tasty so often because I don’t want to over do it.
Then again, Spark has been keeping me in line pretty good these past couple months.
