No longer quaking in my boots!

Ah, the other day I seem to remember blogging that I was quaking in my boots because I was afraid of what would happen if I partook in a certain potluck dinner that I was supposed to attend on Thursday.

Well as fortune would have it, Iím lucky. I guess even though it really was quite impossible to track the calories for that day the way I hoped, I survived it and even lost some weight.

Goodbye 350s, hello 340s!

So I guess that the world doesnít come to an end when calories canít be tracked. Whatís important is that Iím tracking them again and that I was careful that day so that I wouldnít get myself in trouble.

The only other food I ate that day was a bowl of Go Lean Crunch and a banana. Thatís all I could handle anyway. It turns out that it takes a lot less food now to fill me up. I was quite satisfied after I was done eating that night.

It turns out my meatballs were a hit too. Thanks to Better Homes and Gardenís Diabetic Living publication anyway, it was their recipe. I merely followed it.

They were major kick-butt meatballs though! Such an easy recipe too! Iím not sure if it was the recipe or that it was made in a Crockpot creating a depth of flavor, or both. Iím guessing both.

The sad thing, I got only three meatballs! After the group was done, my mom loved them so much I gave her all the leftovers!

I guess thatís okay, I have more ingredients at home, and maybe I shouldnít be making something so tasty so often because I donít want to over do it.

Then again, Spark has been keeping me in line pretty good these past couple months.

Yea for SparkPeople! Iím loving the Spark!

    Awesome. I find potlucks a challenge. I make sure to bring a salad and fruit tray in addition to a covered dish, (with food in it). Congratulations!

    Well done!

I'd say make the meatballs again, and immediately portion them into plastic tubs then freeze all except one portion. You'll enjoy the portion immediately, not be tempted to go back for "seconds", and supper is made for a few days. Win, win.
