The week's bonus blog challenge for our Aspire to Inspire BSG challenge is to write about our favorite Thanksgiving foods.
This is an easier blog to write because, since my family is relatively small, we do not have the abundance of foods that so many family Thanksgiving celebrations have.
Our Thanksgiving is very small. It is only my husband, me, my son, daughter-in-law and grandson. My son does not like turkey so we always have ham instead.
Our Thanksgiving meal consists of ham, scalloped potatoes, dinner rolls, corn, and olives. For desert I usually make a mock cherry cheesecake and we buy a lemon meringue pie.
My mock cherry cheesecake is:
2 angel food cakes (I buy the already made ones)
8 oz. cream cheese (I use light)
12 oz. cool whip
1 cup powdered sugar
1 can cherry pie filling and topping (light)
You combine the cream cheese and powdered sugar and then add the cool whip until well mixed. Then you break the angel food cakes into chunks and mix it all together. I use my hands to make sure it is really well mixed. Then you put it into an oblong baking dish and add the cherry pie filling and topping on the top. Refrigerate until serving time.
Super simple and very delicious.
Leftovers, if any, mostly go home with my son, daughter-in-law and grandson.
