My Week

I added a fruit to my lunch each day this week except for Friday. Fridays seem to be tough for me. Other than that, it has been a stressful week - so I haven't eaten so well.

I need recommendations for quick easy meals that everyone in the family will enjoy.

Also need more support buddies so please add me as a friend if you want someone who will stay in touch frequently.

    I feed a family of 6 daily. If you visit my blog you will see my menu board and how I plan my meals. If you want some quick and easy recipes I will be more than happy to share some of what I make. As I started this journey here a couple of months ago I was focused on changing my own habits, because nobody else in my house has these issues. My husband however, said that if I'm changing my eating habits to be more healthy, then the rest of the family needed to be supportive and follow suit. Now he still sits down with his big bowls of ice cream and such but it helps to know that he wants everyone to work on this and I'm not going it alone.

    One of my new favorites is a black bean nacho recipe that is on here. We had it last about a week and a half ago. Took about 20 minutes to make because I made everyone their own plate instead of making huge platters for everyone to share.

    Another of my favorites is lemon pepper baked chicken breast with wild rice and steamed veggies. I bake skinless chicken breasts seasoned with lemon pepper in the oven for an hour on 350 (I put them in frozen), and steam some frozen broccoli or carrots, and make wild rice (my kids prefer Uncle Ben's original) on the stovetop. Doesn't take very long.

    Now that its getting colder I'm going to be using my crock pot alot more. Hit me up for some more recipes. I have literally thousands.
