Thanksgiving Dinners

Friday, November 16, 2012

This year I will be having four Thanksgiving dinners -- cooking for 3 of them. I have 6 turkeys in the freezer and two in the refrigerator.

Tomorrow is the first - it is our immediate family Thanksgiving. My children and their families will be here. We will eat @1:00. Then while the kids are napping we will clean up. Afterwards we will head to downtown Castle Rock for Starlighting. This is an annual town celebration and ceremony when the big star on top of the castle rock will be lit. There are booths and activities, plus fireworks.

I did a lot of the prep work tonight. Tomorrow morning I will put the turkey in the oven, start the slow cooker sweet potatoes (SP recipe) and making the rolls. I also will be making the dressing (Stove Top) and carrots & salad. My daughters and DIL will be bringing the rest.

Monday night will be the 2nd dinner I will cook -- turkey is thawing in the refrigerator. My youngest daughter is traveling with a band and they will be staying here Mon. They will be traveling on Thanksgiving and therefore would not have a dinner, so I am making them one.

Thanksgiving Day is at my sister's house. My sisters and their families will be there. I am only making the rolls for that one.

The last one is the Sunday after Thanksgiving -- our church's Thanksgiving dinner. I am cooking the turkey.

I am definitely going to be very careful in what I eat and portion things out. Plus, I am scheduling in my workouts.

Today, I walked on the treadmill for 91 min! It was divided up into segments. I was so surprised that it lasted that long.
