Quick Paleo Pancakes

Here's a short clip of me flipping a paleo pancake at home! Enjoy.

The Paleo Diet Solution by Robb Wolf offers a primal solution to pancake cravings.

Try his recipe with real maple syrup, it makes enough for 2 meals (for me).

QUICK PALEO PANCAKES:
2 eggs
1/2 c unsweetened applesauce
1/2 c nut butter (not peanut butter! try cashew, almond or macadamia nut butter)
1/4 t cinnamon
1/4 t vanilla
coconut oil

Mix all ingredients together except coconut oil in a bowl, stirring well until you have uniform batter. Use a bit of coconut oil to grease a non-stick skillet. Spread some of the batter on a skillet to form a pancake, then cook over low/med heat. Flip after 1-2 minutes, careful not to burn them! Robb Wolf suggests toppings like chopped apples and cinnamon, heated blueberries and unsweetened applesauce.

    I know, sounds like it might be "yuk" right?! However, surprisingly delicious for a paleo girl. :)
