3-4 oz boneless skinless chicken breast (I roast mine and slice it)
21 g fresh spinach (ish)
50 g cucumber, peel on
1/4 cup sliced red bell pepper
14 g Archer Farms Wonton Strips
1 no sugar added mandarin orange fruit cup
1 tbsp (17 g) Archer Farms Asian Sesame Dressing
(Mine was 3.3 oz chicken, and clocked in at 280 calories and 25 g protein)
It was delicious.
I learned an awesome way to measure salad dressing! Instead of doing the tablespoon thing (it never seems like enough, does it? And you just dirty a tbsp...), I hit the 'tare' button on my food scale (the one that zeroes it back out again) and just drizzle it onto the salad! It measures it in grams, and you can even do a half serving. That's what I did with this recipe, and it worked out great!
Also, I began to question the fundamentals of salads. Like--who ever said that salads have to be 85% lettuce? I reject this. I like my salads full of STUFF. Tomatoes and cucumbers and red peppers and strawberries and grapes and apples and sometimes onions...black olives and chicken breast and taco-seasoned ground beef and steak...fresh corn, lime juice, reduced-fat shredded cheddar...even bacon bits. And you know what? I don't like romaine. I'll deal with it, but I prefer spinach.
1 med-large apple
1 cup red grapes, sliced in half
1/2 cup chopped celery
1/2 cup pecans (optional, for those of us allergic to nuts)
1 tbsp light Miracle Whip
Trust me, it's delicious.
Cucumber Salad is also awesome, and I'm really into chopped chicken cobb salads now...
