2 quarts fresh cucumbers, sliced (unpeeled)
1 large onion, thinly sliced
2 tbsp. canning salt or kosher salt (heaping)
1 1/2 cups sugar
1/2 cup vinegar

Combine cucumbers, onion and salt. Mix and allow to sit at room temperature for 2-3 hours. Do not rinse.
Stir together sugar and vinegar until dissolved. Add to cucumbers. Transfer to airtight freezer containers and freeze for up to 3 months.

    Sounds interesting. It sounds like a lot of salt to me, but I guess if you're using 2 quarts of cucumbers, that would make up for it. LOL. Keep up the amazing work!

    Will the pickles remain crisp or does the freezing break down the cell walls and soften the cukes? I've heard of freezer pickles but have avoided making them because I hate mushy pickles.
