Full-bore Paleo starting tonight - ideas welcome!

Tonight begins a bit of an adventure. I've been off of wheat and gluten since early this year, have read about the Primal Blueprint and paleo diet, and changed my eating a good deal along these lines. Last week, though, I saw a new doctor regarding persistent skin issues and she suggested an elimination diet for a month to see if my problem is related to allergies to any of the "big five" (dairy, eggs, legumes, soy, and gluten). I had already cut out the last three groups but I have been eating lots of dairy and eggs. So now I'm all in for the paleo lifestyle.

So, my wife and I have been working on a repertoire to make eating nutritious, healthy, and fun. . Right now we're thinking lots of fruits and veggies, meats, nuts, and potatoes. Almond or coconut milk to drink/add to coffee/tea. Olive and coconut oils for cooking.

Dinner tonight (thanks to my wife!) was organic Yukon potatoes drizzled with olive oil and a nice mix of collard greens, homegrown tomatoes, yellow sweet onion, and Crimini mushrooms.

And a nice touch of dark chocolate to end the night. emoticon

I realize I probably just have to look at any number of websites for good ideas and recipes. Still, I would love to hear from those of you with more experience for tips and insights about what has worked for you. emoticon emoticon

    Going back to read your entries for the last week. I "started" the Whole30 the other day, and immediately fell off with company this weekend! So I am going to start again today. I purchased Practical Paleo a month ago - great book! If you haven't already, check out her website BalancedBites, and also the Whole30 website. I also downloaded NomNomPaleo on my iPad, not an expensive app and great recipes and pictures to go with them. Also a blog you can follow!

    Dinner looks delectable but I'd be surprised if your chocolate didn't have some dairy in it????

    Well, I don't have any tips and tricks, but the dinner looks amazing!
I have a laundry list of food allergies and you definitely become a bit of a mad scientist in the kitchen!
I hope the elimination diet helps you out with the skin issues.
