The Lowest Calorie Noodles in the World!

Tonight I made something awesome! Delicious noodles that have very few calories, but delicious flavor and a lovely al dente texture. What is the magical secret you may ask? SPAGHETTI SQUASH!! I had heard about this before, but just tonight I got around to actually trying it out and boy was it delicious. A full cup of "noodles" has just 42 calories, 10 grams of carbs, 1 gram of protein and virtually no fat. Add to that a variety of vitamins and minerals, and that makes for some delicious pasta. I made my noodles by taking a 3.5 pound squash, puncturing it a few times with a knife to add some steam holes, and then placed it on a cookie sheet in the oven at 375 for 50 minutes. After letting it cool for 10 minutes, I sliced the squash in half, discarded the seeds and scrapped out my noodles with a fork. The trick is to go width wise, not length wise down the squash with your fork, so that you pull in the direction of the noodles and don't tear them. I tossed my noodles with a bit of homemade reduced calorie alfredo sauce and made it a meal with a side of green beans and some grilled chicken. Even the boyfriend didn't miss the real pasta! Try it out tonight, you won't be sorry :)

    Love, love, love, spaghetti squash! So glad you discovered it! My Mom made it ONCE when I was a kid and have just rediscovered it this year. When my hubby had lasagna, I made my squash with my famous sauce and mozzarella to top it off. Next time will bake it in the oven so as to get the browning effect! Cheers!

    While there are nights where I definitely want the carbs (usually right before or after a race day -- like tonight, when I had real spaghetti), I tend to lean towards spaghetti squash the rest of the time. Besides that, nothing is more hilarious than setting half a spaghetti squash rind inside my hamster's cage and watching her clamber around in it, nibbling here or there and then rolling around in the squash remains as though she were in hamster heaven. :)
