National Deviled Eggs Day

National Deviled Eggs Day is today. All of you devils, must go forth and consume deviled eggs on this very special day.

Certainly, the whole purpose of this day, is to make and eat Deviled Eggs. You can use your favorite recipe, or (hopefully) find a restaurant serving them in recognition of this day.

Make plans on getting your fill of Deviled Eggs on National Deviled Eggs Day!

Origin of National Deviled Eggs Day:
The originator of this day was quite devious. The little devil failed to provide any documentation on this day, or to take credit.

We did not find any documentation confirming this to be a "National" day. We found no congressional records or presidential proclamation.

Deviled Eggs Recipe

This is a basic deviled egg recipe. You can do all sorts of variations. Try adding chives to the egg yolk mixture. Or, instead of bacon bits, put a green olive (whole or sliced) on top of each egg.

Yield: 12 halves

Deviled Eggs Ingredients:

6 hard boiled eggs, chilled, peeled and cut lengthwise

1/4 cup mayonnaise

1 teaspoon dry ground mustard

salt and pepper to taste

real bacon bits

paprika

How to make Deviled Eggs:

Carefully scoop yolks out of egg halves.

Set egg white halves aside on a plate or a piece of waxed paper.

In a bowl, mix together with a fork the egg yolks, mayonnaise, mustard, and a dash of salt and pepper.

Fill the empty egg whites with the egg yolk mixture.

Sprinkle a few bacon bits on top of each egg.

Sprinkle a little paprika over the egg for effect.

Set finished eggs onto a serving dish.

Serve chilled.

    I LOVE deviled eggs. I like to put some finely chopped baby dill pickle in my yolks, Yummm..... hard to stick to just one or two.....

    Ew! Mayo in eggs? I use miracle whip, horseradish, mustard, diced onion, paprika. I have taken them to potlucks for over 45 years and never had leftovers,, Olives are for pizza and martinis. I love deviled eggs!

    If you want to cut the fat, try using plain yogurt in place of most of the mayo - I find that about half a teaspoon for flavor works great!! I do the same thing in chicken and tuna salad.
