SO I LEFT SPARK FOR AWHILE TO GET MY HEAD TOGETHER (A MONUMENTAL TASK I MAY ADD) AND TO SEE IF I COULD FIND OUT A WAY TO SIMPLIFY MY GOOFY LIFE. I DID GET SOME MAJOR HELP IN THAT AREA. WHAT I DIDN'T EXPECT WAS SOME CHANGES IN MY PERFECTLY WORKING FOOD PLAN AND HEALTH ISSUES. IF IT ISN'T ONE THING, IT'S 15 OTHERS.

SO I WENT TO SEE MY ENDOCRINOLOGIST. HE SPECIALIZES IN MY TYPE OF BRITTLE DIABETES. THIS MAN JUST LOVES TO USE ME AS A GUINEA PIG. I MUST HAVE SOME KIND OF SIGN ON MY FOREHEAD THAT SAYS "WILL DO ANYTHING FOR CASH". ONLY IN MY CASE, HE PAYS ME IN INSULIN - WHICH IS NOT A BAD EXCHANGE - AS WELL AS FREE DIETARY COUNSELING FROM HIS DIABETES EDUCATOR AND HIS NUTRITIONIST. I CAN CALL THEM ANY TIME AT ALL AND NOT GET CHARGED. TO ME, THIS WAS HUGE AND WELL WORTH WHATEVER HE WAS PLANNING ON TRYING THIS TIME.

SO HE SHOWS ME THIS LETTER THAT HE GOT FROM THE AMERICAN MEDICAL ASSOCIATION RECOMMENDING THAT THEY ENCOURAGE ALL THEIR PATIENTS TO GET OFF ALL ARTIFICIAL SWEETENERS OF ALL KINDS; THAT NONE OF THEM, INCLUDING STEVIA, ARE SAFE. I HAVE BEEN USING THIS STUFF FOR OVER 50 YEARS! WHAT THE HECK? SO OF COURSE MY FIRST QUESTION WAS, "WHAT AM I SUPPOSED TO USE INSTEAD THAT WON'T RAISE MY SUGAR THROUGH THE ROOF.?"

THE VERY THOUGHT OF NOT HAVING MY ONE PACKET OF SWEETENER IN MY COFFEE EACH MORNING - OK 3 CUPS. ALL RIGHT! 6 CUPS! GEEZ! YOU PEOPLE ARE SO PUSHY!
ONE PACKET IS SUPPOSE TO BE THE LIMIT FOR ANYONE, DIABETIC OR NOT AND THEN IT HAS TO BE 100% PURE STEVIA EXTRACT. I AM DOOMED! I CANNOT, REPEAT, CANNOT DO WITHOUT MY COFFEE. CAN YOU SAY THE WORD ADDICTION? SO I ASKED AGAIN, "WHAT DO I USE?"

THE ANSWER SURPRISED ME. PURE ORGANIC EVAPORATED CANE SUGAR (KIND OF A LIGHT BROWN COLOR) OR AGAVE NECTAR. THIS COMES IN LIGHT OR AMBER AND IS FOUND BY THE SUGAR BUT LOOKS LIKE HONEY. SO I BOUGHT A SMALL BAG OF THE SUGAR, SINCE I WAS CONVINCED I WOULD HATE IT, AND A BOTTLE OF THE AMBER (DARK) AGAVE NECTAR. THE INGREDIENT ON THAT BOTTLE SAID, "100%BLUE AGAVE NECTAR. THAT'S IT! PERIOD! SAME WITH THE SUGAR. PURE ORGANIC EVAPORATED CANE SUGAR.

SO THAT WAS A WEEK AGO LAST FRIDAY. BY WEDNESDAY I HAD GAINED 5 POUNDS. WHAT? SERIOUSLY? PHOOEY ON THIS GARBAGE. SO I CALLED THE NUTRITIONIST AND SAID, "WHAT THE HECK?" SHE HAD BEEN EXPECTING MY CALL. SHE SAID THIS OFTEN HAPPENS WHEN PEOPLE GO BACK TO THE REAL THING INSTEAD OF THE FAKE STUFF. IT TAKES AWHILE FOR YOUR BODY TO GET USED TO THIS NEW THING YOU ARE PUTTING IN IT. AND THE FAKE STUFF IS 10 TIMES SWEETER THAN SUGAR. BUT 5 POUNDS? I HAVE WORKED FAR TOO HARD TO GO BACK THAT FAR THAT FAST AND HOW LONG WILL IT LAST.

WELL, I GOT MY ANSWER TODAY WHEN I WENT TO WEIGH IN AND WAS BACK DOWN BY 4 POUNDS. AND I HAVE TO TELL YOU, THIS STUFF IS GREAT. THE SUGAR I USED IN A PIE YESTERDAY AND DH SAID IT WAS THE BEST PIE HE EVER HAD. THE AMBER AGAVE NECTAR TASTES LIKE A CROSS BETWEEN BROWN SUGAR AND MAPLE SYRUP AND IS AMAZING IN COFFEE. BUT NEITHER GOES WELL IN COLD DRINKS. THEY JUST DON'T MIX WELL. THEN HE DECIDES TO ATTACK MY COFFEE! I KNOW THIS MAN IS FROM SYRIA AND IS ACCUSTOMED TO WAR, BUT HE HASN'T SEEN ANYTHING LIKE WHAT WILL HAPPEN IF HE TRIES TO MESS WITH MY CAFFEINE. BUT HE DID. HE TOLD ME TO BUY A CAN OF DECAF, POUR IT IN A BIG BOWL AND MIX IT HALF AND HALF WITH MY DARK ROAST COFFEE.

WELL, LOW AND BEHOLD, IT DIDN'T TASTE BAD BUT I FOUND MYSELF FALLING ASLEEP AT 8:30 AT NIGHT AND THEN UP AT 3 AM FOR THE DAY. NOT LIKING THAT MUCH! AGAIN THEY SAID, "YOUR BODY WILL GET USED TO IT AND THEN WE WILL GO DOWN TO ALL DECAF." YEAH! RIGHT! PERHAPS WHEN BUICKS FLY! BUT THEY WEREN'T DONE YET!
"YOU ALSO USE MARGARINE -ALTHOUGH A HEALTHY ONE, THAT NEEDS TO BE STOPPED AS WELL. AND ALSO THE CANOLA OIL." NOW I WAS COMPLETELY LOST. IT APPEARS THAT THE SOYBEANS HAVE BEEN GENETICALLY ALTERED. MANY, MANY OF OUR FOODS ARE AND WE DON'T EVEN KNOW IT BECAUSE THE GOVERNMENT IS NOT REQUIRED TO PUT THAT ON THE FOOD LABELS.

SO WHAT AM I SUPPOSED TO USE INSTEAD? REAL BUTTER, REGULAR YOGURT, SAFFLOWER OIL OR PURE OLIVE OIL THAT HAS ONLY THAT ONE INGREDIENT ON THE LABEL. THE TRICK WITH ALL THESE CHANGES WAS HOW TO TRY TO INCORPORATE THEM INTO MY MEASLY 1,000 TO 1,200 CALORIES A DAY. I FELT MYSELF FADING INTO THE TWILIGHT AT THE VERY THOUGHT OF IT. PERHAPS I SHOULD JUST GO GNAW ON A TREE OR USE THE BROWN GRASS AS FODDER. I COULD FIGHT THE SQUIRRELS AND BIRDS FOR THE TINY CRABAPPLES ON THE TREES BUT I AM BIGGER THAN THEM AND COULD JUST HEAR SOME BIG OLD CROW SQUAWKING AT ME, "PICK ON SOMEBODY YOUR OWN SIZE - IF YOU CAN FIND ONE."

BUT I DID INDEED MAKE THE CHANGES AND STILL MANAGED TO LOSE THE WEIGHT. BUT HOW I DID IT WAS TO UP MY EXERCISE SUBSTANTIALLY. I SAW NO OTHER ALTERNATIVE SINCE I CAN'T GO LOWER ON CALORIES. NOW MY BACK AND HIPS ARE SO INFLAMED THAT THE DR. WANTS ME OFF MY FEET FOR A FULL WEEK. YEAH! LIKE THAT'S GOING TO HAPPEN! BUT I WILL TRY - REALLY. SINCE I DON'T HAVE A LAPTOP, I WONDER IF SPARK TIME COUNTS AS BEING OFF MY FEET.

  So much to learn about what's good/not good for us. Had a stonking headache all afternoon and evening yesterday. My partner asked how much I'd had to drink. "Just three coffees" I replied - not decaf either. "You're dehydrated!" he yelled. D'oh!!!!

    Erin, I'm so glad you haven't lost your sense of humor. . .your blog did make me laugh. It is so confusing as I'm always reading something is good then later they report it is bad for us. It's really hard to know what to do. I'm happy that your happy with the nectar type sugar. I've never tried it but knowing me my Blood sugars would go even higher than they are now. I love my coffee and right now I'm only drinking decaf and it's true I'm sleeping better at night but I don't feel as good without my caffeine. I'm addicted to it but I'm going to try the half decaff mix and hope it's almost as good. Take really good care of Yourself. Let us know what works for you.

    Yep ... went thru a similar thing several years ago. Another thing to watch out for are products with corn syrup as a top ingredient as that can add weight, too. Why in the world some companies need to put corn syrup in bread is beyond me.

    Erin, I am so sorry that you are going through all of this mess! I'm very lucky--I hate the taste of coffee or tea but because you do enjoy them, how about a nice shot of booze in it an you'll be too happy to notice that anything is missing! Just thought I'd stick my two cents in. (hugs) Noel

    Whew! You're sure having it rough. But it sounds like all those things should help. Can't imagine what will happen with sitting for a week, when exercise was what kept your weight down. You'll have to keep us posted.

    OMG YOU HAVE ME LAUGHING.....LOVE YOUR BLOG. I CAN'T BELIEVE ALL THE CHANGES YOU ARE GOING THROUGH BUT I DO LOVE YOUR SENSE OF HUMOR. I'VE ALWAYS HAD MY COFFEE WITHOUT SUGAR AND I ONLY USE IT IN COOKING WHEN I HAVE COMPANY BUT WILL HAVE TO CHECK THIS OUT. I SURE CAN SEE WHY YOU WANTED TO PULL YOUR HAIR OUT.

    emoticon Smile. I don't use sweeteners any more but agave and real sugar raise my blood sugar (I control my diabetes without medicine) so I'm stuck with coffee (and I do love my coffee) with a TBS of half and half. After my first two cups I switch to black. And no sweetener. That's OK. I can live with that. I switch to decaf in the late afternoon. Got a pot ready now. So anyway, I will never give up my coffee. I make this my one and only indulgence. I get my beans freshly roasted on Saturday morning at our Farmer's Market. She has a great decaf too. And as for that margarine stuff, I've never used it. Just use a tiny bit of butter - 5 grams or less. You have a good MD. He seems to be taking you on the right path.

    Oh, do I hear you! It is enough to make me pull out my hair--why can't big agribusiness just provide us with plain old-fashioned real food? One week we hear this is good for us and the next week some researcher says it is killing us! Can't offer you any help, but I sure can give you tons of empathy.
