I whip my own whipped cream, the only difference between homemade real whipped cream and say the store bought 'Cool Whip" is stiffness. Cool Whip is stiffer.
There is a product called "Clear Jel" that can be added to the whipping cream and that will stiffen it up like store bought Cool Whip, however Clear Jel is a loaded carb...grrr.
I use Xanthan Gum to thicken up my oil & vinegar dressing, so it doesn't just drip right off my beautiful salad and stand on the bottom of my salad bowl or plate.
I wondered if Xanthan Gum would stiffen my whipped cream, so I could have that thickness without the added carbs....
It worked ;-)
