The following recipe is one I have used for 30 years. It's my favorite tofu recipe and uses turmeric as a seasoning which is touted as a cancer fighter. Enjoy this recipe as you would scrambled eggs. I usually make a big pot of whole grain grits to go with it, sliced fresh tomatoes in the summer or orange slices in the winter. Leftovers can be used as "egg salad" for sandwiches by stirring in a little mayo. If you are feeding a hungry bunch like I do double the recipe!
Saute in skillet: 1/2 cup chopped onion, 2 T. water and 1 T. oil
Add: 2 cups (1 pkg) tofu and mash down with a fork until all scrambled.
Add: 2 T. chives or parsley, chopped
1 T. Chicken style seasoning*
1/2 t. onion powder
1 T. Brewer's yeast flakes
1/4 t. garlic powder
1/4 t. turmeric
1/4-1/2 t. salt
Heat until flavors are blended.
*Chicken style seasoning is a vegan product and does not contain chicken. It can be found in health food stores.
