wednesday--cupcake night aftermath

yes--our garden club that isn't a garden club had cupcake night last night. not too many attendees--but plenty of cupcakes. fortunately most of them were minis, so you could sample everything and not be too "out there".
my big victory is the fact that this morning i tracked the entire day yesterday. including estimates for the cupcakes. i went over my limit, but that didn't surprise me. the fact that i sat here and owned up to it is what mattered. i was actually suprised when i entered the soup i made for dinner in the calculator the calories were much lower than i would have thought--so that saved me from utter destruction.
we had a ton of different kinds of cakes--pineapple upside down, peanut butter, bacon and chocolate, lemon ginger, carrot, spice cake, banana with peanut butter ganache, chocolate stuffed with coconut and cream cheese. the big winner of the night was a strawberry cupcake made with an icing that had balsamic vinegar reduction in it. it was really lovely. we met at marianne's house, which is such a magical place. mariane has a heart overflowing with love and even though her house is very humble and in some disrepair (its over 100 years old) her spirit fills every corner and its just a lovely place to be.
i was especially please when ben talked to her about coming to the botanic garden where he works next year to present a series on food preservation. this is a dream that has lain close to her heart for a long long time. after a lifetime of working so hard to care for and feed and nurture her family, all that she has learned is finally being acknowledged for the true value of it. she is on a threshold in her life and i am very glad to be watching her as she comes into her own. she so richly deserves the chance.
so now i have to deliver the two sets of cupcakes that came home with me--one to rosie, whose MS is throwing her a curveball these days and she couldn't attend, and one for patrick; who has been helping his mom as she recovers from surgery.
i think its safe to say that fun little cakes prepared by friends who care about you are medicinal--don't you?
