I couldn't decide which 'fall veg' recipe to give you, but finally settled on this one, as I found a scrumptious version of it right here on spark!
It's for a Pumpkin Baked Ziti with Sage Crumble.
It's VEGAN but had many many great reviews from vegans and non-vegans alike (not just on spark). The spark version decreases the size of the portion, and gives you all the cal and nutrition info. Great with a light, leafy side salad, or a lovely serve of brussel sprouts sauteed with chestnuts.
Oh look, there's a spark recipe for that too...
