Honey Walnut Asparagus Salad

Ingredients:
1 bunch of asparagus
1 tbsp olive oil
6 cups mixed greens

Dressing:
1 tbsp walnut oil (or extra virgin olive oil)
1/3 cup roasted walnuts
1/4 cup craisins cranberries
2 oz feta or gorgonzola cheese
1 tbsp honey
2 tsp champagne vinegar (or any vinegar you like)
zest of 1/2 lemon
juice of 1/4 lemon
dash of salt and pepper (to taste)

Preheat oven to 400 degrees and mix the dressing ingredients.

Snap the asparagus at the base and throw away the pulpy bases. Roll the asparagus florets in olive oil, then roast for about 7-10 minutes and let them cool to room temperature. Place 1/4 of the asparagus over a plate of mixed greens, and pour 1/4 of the dressing over each plate.

Makes 4 servings.

I should have taken a picture but it was so good I ate it too quickly ;) Very filling and satisfying for the calories. Add grilled chicken or salmon for a complete meal!
