This is my new favorite way to eat zucchini:


Microwave for about 3-4 minutes:


Drain off the excess water:


Add one or two Laughing Cow cheese wedges. Or tomato sauce & parmesan-also good!


JELLO EXPERIMENT:

Sugar free jello- prepared according to package instructions w/ fat free vanilla yogurt stirred in. It was good. Not what I imagined it to taste like, but definitely doable when I'm craving something sweet.

    I love this trick with zucchini. I like to drizzle flax seed oil over it and parmesean.

    Your zucchini looks so pretty. One of my go to meals is sliced zucchini and spinach with parm cheese and sometimes I throw in some chopped up chicken and/or stewed tomatoes.
