My new job assignment has kept me very busy, and while I have keep up with tracking, thanks to my phone, I haven't had a lot of dedicated Spark time to blog. Today, hooray, is my day off, and I can catch up...today's blog questions are all about food. 16. Do you follow an eating 'plan'? (Vegetarian, paleo, South Beach, Atkins, yada yada yada) How has this helped you live a healthier life? I try and follow the Mediterranean diet, which is heavy on fruits and vegetables, lean protein (but not red meat) and olive oil. I try for one whole grain a day. I find myself veering more towards vegetarian but I live with carnivores. I love to cook, and try new recipes but my family doesn't always eat them, they are not adventurous when it comes to food. Getting fish in twice a week has been hard. I haven't found many fish recipes that the family likes. I also try to make a meatless crock pot dish every Monday ( when it's a busy night and every eats when they can). I am also looking for new meatless monday recipes. I think the nutritional changes that I put in place last September have really impacted my health. My last blood panel showed that my cholesterol was in normal limits, and I was able to decrease my insulin. My next goal, is to have better blood-work in December, and to be off of insulin completely.
17. Do you have any meals/snacks that you repeat over and over? What are they? I eat oatmeal every day. I usually eat a peanut butter, fruit, whole grain snack every day. I love a apples peanut butter sandwich.
18. Do you have a go-to meal for days when you have to be on the go, no time to stop to eat and no refrigeration/cooler available? apple, nuts, cheese. I carry these with me in my lunch bag. It's the perfect meal to eat on the road, and my new job assignment has had me on the road for the past two days.
19. What 'unhealthy' food(s)/drink(s) do you refuse to give up? Any that you have given up completely? I have this weird thing for hotdogs. I don't like them, think the whole process of how a hotdog is made is disgusting, but sometimes, I crave a cold hotdog. I am trying to give them up completely, and have started making chicken strips, that I keep cold in the refrigerator, so when the I NEED PROTEIN NOW feeling hits, I can eat some chicken and not a hotdog. I would not buy them, but my carnivores ask for them every week. I've tried to switch to turkey dogs, but those didn't go over very well. I've given up bacon, and most breakfast meats. I tried to substitute turkey bacon, and turkey sausage, and turkey breast that cuts up like ham but the carnivores protested. Now, Steve just makes them their breakfast, and I skip it and have oatmeal. 20. What are your favorite healthy foods? What healthy foods have you 'discovered' along the way to better eating habits? I love apples, and eat one every day now that they are in season. I am loving my CSA produce box, which has exposed me to new vegetables every week. I discovered some great whole grain, no fructose corn syrup bread, called Dave's Killer bread, light, that I love. Each day, I get to wake up and think "what good for me nutritious and fun food can I eat today?" It's a clean slate, and I look forward to running my daily report to see how I did on my daily nutritional goals.
