Cooky Recipe Number 15: Coconut Apricot Strips

These have a shortbread crust. After it bakes for about 10 minutes you spread on apricot and pineapple jams. Safeway didn't sell the the pineapple jam individually but luckily they had a mixture so I used that. Then you add a meringue with coconut in it on top and bake for another 20 minutes. They got rave reviews :-)

My butt is feeling much better now. I even ran a few times but then my arch and ankle started to hurt on that side. Another week passed and I got a sports massage. Feeling much, much better now. I did buy myself a new bike to ride outside. Got in 8 miles last Sunday and 9.3 this morning.

The 24" frame only comes in the old-people champagne but it's more brownish than goldish so it's okay.
This afternoon, I'll be baking some watermelon sugar cookies for my niece's birthday celebration tomorrow.
Also looking forward to attempting a short run tomorrow.

    When you said old people champagne, I was thinking of the color of pantyhose, but it doesn't look pantyhose colored in the photo. Woo hoo! How do you like the fixed gear? I have a hard time believing all the guys on the island who say they're better for going up hills. Yeah right. Is anything better when you're going up Hills of Insanity?

    Mmmm Delicious looking! What is the next batch? watermelon sugar cookies?? Do you like your bike? I have been looking for a new bike but because of my height I can't decide on one. How is yours with the 24" tires? I've been told 18-22" but those are usually kids. haha

The cookies make my mouth water! You are getting in some good mileage. I hope your body continiues to improve.

Cool bike! I work in downtown Denver and the "cruisers" are all over the place! Electra makes a good bike. The 3-speed is terrific. Good choice.

Watermelon Sugar Cookies? photo is a must! i love watermelon and i love sugar cookies. hope there is no red dye involved...
