Cooky Recipe Number 15: Coconut Apricot Strips

These have a shortbread crust. After it bakes for about 10 minutes you spread on apricot and pineapple jams. Safeway didn't sell the the pineapple jam individually but luckily they had a mixture so I used that. Then you add a meringue with coconut in it on top and bake for another 20 minutes. They got rave reviews :-)

My butt is feeling much better now. I even ran a few times but then my arch and ankle started to hurt on that side. Another week passed and I got a sports massage. Feeling much, much better now. I did buy myself a new bike to ride outside. Got in 8 miles last Sunday and 9.3 this morning.

The 24" frame only comes in the old-people champagne but it's more brownish than goldish so it's okay.
This afternoon, I'll be baking some watermelon sugar cookies for my niece's birthday celebration tomorrow.
Also looking forward to attempting a short run tomorrow.
