I am making one recipe per day from my many cookbooks.
Tonight was Bar B Cups. I remember eating these as a kid and have had many versions.
3/4 lb ground beef
1 onion diced
1 tbsp brown sugar
3/4 cup bar b cue sauce (I used Kraft original)
1 tin hungry jack biscuits
3 slices cheese
Brown ground beef and onion. Drain off fat. Return to pan and add brown sugar and sauce. Meanwhile, flatten out biscuits to line an ungreased muffin pan. The biscuits act as muffin cups. Fill muffin cups with meat mixture and top each with 1/4 of a slice of cheese. Bake 400* for 10 mins.
My kids loved these. They are great cold the next day and reheat well. I think next time I'll use pizza sauce and mozzarella.
Already looking for tomorrow.
