Wow! I have tracked all my food for today and I'm in the right area except for calories ... AND I'M NOT HUNGRY! Woohoo! Today was my first attempt at working in the protein/carb balance in each meal AND I tried to eat 3 hours or so apart (not much) ... I am delighted. I didn't even miss my smoothie today! I can't believe it!
For breakfast I combine steel cut oats with peanut butter and blueberries! If anyone would have told me that combination was good, I would have been very, very doubtful! Yum! I may not want to eat it every morning but it was GOOD! I also tried plain fat free yogurt with fresh sliced strawberries, a little Stevia and a sprinkling of granola ... and I mean a sprinkling! It was delicious! I think I might be hooked!
For my "weekly cooking" I made my very first attempt at hummus - next time I'm using the food processor instead of the blender ... and I made a Bean & Greens Soup with spinach that is REALLY good! Tomorrow it is Mediterranean Artichoke Chicken in the slow cooker and Mexican Lasagna! That will pretty much round out the weekly "pre-cooking".
Mmmmm ... that's all I can say right now ... I've eaten well and I'm pleasantly tired, not fatigued! Love it! Can't wait to see what the next few days bring!
