Day 2 Recipe-Grilled Cheese Pizza Sandwich

I am cooking 1 meal a day from the many cookbooks I have collecting dust or from the Sparkpeople Recipes site.

Today on Day 2, I made the Grilled Cheese Pizza Sandwich submitted by PUNKGIRL213 on SparkPeople Recipes. I have an away football game for my oldest son and knew lunch would be the only time to cook. So I picked something fast and easy.

2 slices mixed grain bread
2 tbsp marinara sauce
1/4 cup cozzerella cheese
1 sp chredded parmesan
Salt and Pepper to taste

Spread the marinara sauce on each slice of bread. Spread cheese on one slice of pread. Sprinkle parmesan cheese over mozzerella. Salt and pepper to taste (I also added a dash of italian seasionings for more flavor). Place in heated pan and cook until cheese melts or until bread is toasted.

It was fast, easy and good. Unfortunately, I had it eaten before I remembered to take a picture. I will have to make this for the kids. I think they will enjoy it with some pepperoni.

I have a three day weekend this weekend and am looking forward to a weekend of recipes. I may have to make more than one a day. I will keep you posted on all my adventures.
