In my last entry I was excited about my new bike. Well, if I may say so myself, I'm doing great! Much more steady, going further, and really enjoying myself. I did get a helmet (pink to go with my bike), a little pouch to hold my phone, ID, and keys. So I think I'm all set to pedal my way to weight loss. It will be getting cooler out, but no snow for awhile so I can get in plenty of biking time.
I tried a northern bean soup with chicken stock, cabbage, carrots, and onion. It was DELISH! Soup is one thing I love making and eating in the cooler weather. I read the article today from Spark about potatoes, and I wanted to add another great way for cooking them. Wrap in foil, poke holes around potato with a fork and toss them in a crockpot/slowcooker. Start in the morning and their ready for dinner. Don't add water. They will cook in their own water. They will have the most fantastic flavor you've ever had from a potato, a great way for "baked" potatoes. You can eat the skin (be sure to wash before cooking), add some steamed veggies and a sprinkle of shredded cheese on top and you have a quick easy dinner.
