I just finished watching Julie and Julia for the first time last night. And it inspired me. No, not 'Mastering the Art of French Cooking', but to cook. So each day, I will cook a new recipe either from the many cookbooks I have collecting dust in my kitchen, or from the Sparkpeople Recipe site. I will post my recipe and how it turned out. Also if my family enjoyed it. Tonight I have a football game so it will have to be something easy. Getting ready to browse the recipes for insperation.

Found my first recipe from a Weight Watchers Take-Out cookbook.
It is Skinny Chimichangas. I am going to use ground beef instead of ground turkey. I know it will up my stats but we live in beef country and I just had a side of beef delivered. Instead of deep-frying the chimichanga, I will be baking them. I do have two teenage boys to satisfy so I am doubling the recipe. I don't think one 8-inch tortilla filled chimichanga will be enough. I am going to serve it with a side salad with a corn, bean and salsa 'dressing'. I will let you know how it goes.
