My daughter found this wonderful sweet potato soup recipe when she was looking for foods that help keep migraines at bay. It tastes great!
Simple Sweet Potato Ginger Soup
1 Tbsp canola oil
2 medium yellow onions, chopped
3 large sweet potatoes , chopped– (I like the lighter colored ones, but you can use the orange ones)
1 inch piece fresh ginger root, peeled and finely chopped
6 cups low-sodium vegetable or chicken broth
Pepper to taste
Dash of cinnamon
1. Heat oil in a medium saucepan over medium heat. Sauté onions until golden.
2. Pour in broth and bring to boil. Add sweet potatoes and ginger and reduce heat to medium-low. Simmer until sweet potatoes are easily pierced with a fork (20-25 minutes)
3. Working in batches, puree soup in a blender until smooth, or just mash the sweet potatoes in the pan. I like mine sort of chunky and then I don’t have to wash up the blender! : )
4. Season with pepper and a dash of cinnamon to taste (I don’t use extra salt, but you may prefer to add some at this stage)
And the best part is that you don’t have to have a migraine to give it a try!
