I thought maybe it would interesting for you to know what I am going to be cooking for 300 people for 3 days...

These are race car drivers, their families, their pit crews....

Thursday is a practice night which just means a lot of fun and guys B.S. ing...lol.

Big costco hot dogs, chili, watermelon and small bags of chips.
I also made 250 cake balls to take and a few batches of sugar free cookies for those who need/want them.

Friday, 200 pounds of tritip (seasoned and wrapped in foil, cooked on a huge bbq provided by the local fire department), store bought potato salad, fresh green salad and rolls and butter. (some sort of store bought cake for my birthday).

Saturday, take leftover tritip, chopped it up, grill some chicken breasts and chop it up, and make street tacos. heat corn tortillas up in foil in packs of 20. Pinto beans, tortilla chips and Nacho cheese sauce, lettuce, shredded cheese, onion, cilantro and salsa ( a bunch of store bought cookies).

Then I am done! We get up the next day, clean up all the tables, chairs, trailers etc and then whoever is left, we all go to breakfast and talk about what was great, what wasnt and how we can do it better next year. On the way home, my sister and I make notes while it is all fresh, then next year, we pull out the list and do it all over again!

    Wow, that is a whole lot of food and a whole lot of work! You and your sister are so smart to make notes while the event is still fresh in your mind. And, your birthday!?! Did I miss your birthday?!? Rest assured, I am very glad you were born!!!!!!!!
