This is by request of my new spark friend and co-mocha NELLZIE04 but thought I'd share with the rest of you guys as well.
So the recipe is very simple ingredient-wise but its all about how you knead it (which took me forever to learn) to get it just right.
So the recipe:
1 c Wheat Flour (434 calories per cup but varies so look at those labels)
3/4c warm water (microwave it for like 15 secs)
I start off by putting the flour in my kenmore kitchen-aid until it forms a dough making sure to add the warm water a little bit at a time (not all at once) and then knead that sucker with your knuckles in a baking bowl (not a flat board – Ive tried it this way and it actually makes a difference because you need the dough to have somewhere to stretch against i.e. walls of the bowl) until its a good soft texture.
Then flip the dough and "knuckle-it" again and then fold it and "knuckle-it" again. You do this several times in every which way. The point is that you should punch the dough enough to not have any lumps…the whole dough should feel the same throughout.
Leave it wrapped in the bowl for a half hour to let it rest but its not necessary. I spray a container (with lid) with pam and plop it inside and then keep it refrigerated until you're ready to use.
I measure off 23g of finished dough to make the 45 calorie serving (but the water amount can vary a little so just measure the whole dough and use your food scale to calculate how much dough will equal the calories you want. Since its one ingredient, its an easy calculation)
This dough will yield 20 tortillas.
