Still on track...

Monday, September 17, 2012

Except now I've hurt my back, so I'll be missing a few workouts again, in the interest of not aggravating my injury... and being able to walk tomorrow. Crap.

And I'm sure the weight loss is still going on, I'm still within my calorie limits almost every day, but I'm so bloated right now! Thank you, ovulation. Much like when I'm PMSing, I've got cramps and bloating and ALL that fun stuff.

Can't decide what I want to make for dinner, either. Salt and pepper tofu with stir fried asparagus, or spinach burgers? Probably spinach burgers... I crave them CONSTANTLY!

My new favorite snack that ends up being pretty low calorie... sautee some spinach and garlic in a *little bit* of olive oil, slice up a tomato in the oven and roast it for a few minutes (I do about 10 minutes) and then throw the spinach mixture on top, add about a tablespoon of shredded cheese and broil it until the cheese melts. SO INCREDIBLY GOOD! You get a good amount of veggies for a snack and I think I'd rather have this than garlic bread! Maybe. ;)

Thanks for sharing the link for the Spinach burgers, they sound AMAZING! It's smart to take some time to let your back heal. I've hurt my back before, and instead of listening to my body, kept pushing and could hardly move at all for a WEEK.
Keep going girl, you are doing great!

Actually, these are spinach burgers: http://thevillagecook.com/spinach-b

They're DELICIOUS! I cut back on the red pepper for my daughter, but I love them either way!

...and that's a spinach burger? It sounds good to me! I sauteed a portabella mushroom cap and ate it on a whole wheat sandwich round spread with laughing cow swiss. Tasty, filling, and easy!

Sorry to hear about the back. Take the proper time to heal though. In the long run, you will be better off. It truly is the combination of healthy diet, eating better and less as well as getting more exercise.
