Taco Bell craving SATISFIED!

Since Friday I have REALLY been craving a Mexican pizza from Taco Bell.

So when I got home from Zumba, I opened up the fridge and saw the leftover refried beans (that I made FROM SCRATCH with dried pinto beans), the fresh salsa, and the half a block of raw cheese that didn't get used in Saturday's enchiladas.

I pulled out four corn tortillas (4-inch), baked them for 5 minutes to get them crispy, layered refried beans on one and salsa on the other, stacked them, shredded some cheese over the top...and voila! My two Mexican pizzas.

Even more delicious...and instead of 940 calories, 50 g fat, and a boatload of sodium, I got my Taco Bell fix for 555 calories and 30 g fat. Which, considering my fruit smoothie breakfast, salad and tabouli lunch, and greek yogurt snack -- puts me right at my nutritional goals for the day!!

THE TACO BELL CRAVING HAS BEEN SATISFIED!!

    Sounds delish! I love doing healthy makeovers of restaurant favorites, but sometimes it's hard to find time to cook from scratch. Time for some better planning on my part, I guess! Thank you for the inspiration.

    Yum yum yum. I love mexican flavours! I do burrito bowls often.

Make brown rice with half water, half of my canned homemade tomato sauce (or add diced tomatos to the rice water).

In a bowl, layer rice, black beans, fresh chopped peppers and tomatos, salsa, cilantro, grated cheese! Sometimes diced avocado too!

Occasionally I will also throw in olives or ground turkey. Yum yum yum.
