Good Eats and San Diego Spark Rally!

Hey Sparkers,

Last week I made a pact with myself to get back on the healthy cooking bandwagon and that I did!

I made egg muffins on Saturday. I hadn't made them in a long time because eggs were bothering my stomach but I thought I'd give them a try. My stomach wasn't perfect after so they won't be a regular occurance but here and there.

We've been working on our apartment all week and it's really starting to come along! I really like it. We had grown out of our 1 bedroom and it became a cluttered mess so it feels so nice to have extra space in a clean, uncluttered apartment!

Yesterday was our monthly San Diego Spark Rally - Ice Skating!

It was a great time.....except I fell after skating for about 15 minutes! AAhhh--I don't know why I've become such a clutz!! I have a cut and bruise on my right hip and hurt my left knee. I guess luckily it wasn't the knee that I hurt during the bike race, but now I can't put pressure on either knee! So I sat and chatted the rest of the time...didn't want to risk injuring myself further! It's always so fun to meet up with Sparkfriends!

Lastly, I've become totally over the top obsessed with mala beads!

    As usual, your food looks amazing! Your Spark rally sounds like a lot of fun, except for the injury part! I am quite possibly the world's worst ice skater, but I really do like the idea of it! Hope your knees feel better soon! emoticon

    Lena, your food pics look great. How is it cooking in your new kitchen? Tell me, what appliances do you use the most? I've been trying to use my crock pot more often. Today, I'm throwing in a clean eating pulled pork recipe that I got on We also tend to use the cuisinart grill/griddle as a way to cut out oil/fat. It sounds like your mother is really liking her Kitchen Ninja. I haven't tried one of those although I would like to try making some healthy smoothies. Enjoy your new space.

    I hope you're feeling better soon. You're beating up on your knees! Your beads are really cool and that purple top was really cute. Love the food pictures. You're the only person I know who truly eats clean. You inspire me to do better and I am gradually! I was a lump on the couch yesterday. My back was not so good, so I stayed put and watched football. I was in the pool on Saturday though and bought healthy stuff at the grocery store. Exciting weekend, huh? I hope ya have a great week.
