Breakfast today was blueberry-cornmeal pancakes w/ maple syrup and 1/2 of a Tofurky sausage, and coffee w/ silk creamer.
Lunch was a cup of quinoa spaghetti w/ lots of saucy vegetables, and a Boca 'chik' patty.
I wanted a little dessert today so I made a tiny bit of chocolate bark. If you make just one, you don't have those leftovers lying around. So here's what I did: I melted one tbsp. of chocolate in the microwave, spread it into a disc on waxed paper and topped it with dried cherries and almonds, but you can use anything you like.
This pic doesn't do it justice because dinner was really great. It was a quesadilla of sorts made with a whole grain wrap, 1/4 cup Daiya cheese, avocado, mushrooms, onions, peppers, carrots and salsa, and 1/2 cup beans.
for the last couple of months we've been eating very simply during the week and saving our more "festive" menus for the weekend. Oddly enough, I'm really looking forward to our weekday fare. Really loving simple food these days!
