Ribs Without the Bones

Today I made Seitan BBQ Riblets from SparkPeople Recipes. I had it with Sweet Potato Fries on the side.

They came out quite tasty! They remind me very much of the McRib Sandwich that they used to have occasionally at McDonald's. In fact I may just have to try a serving of my leftovers in a bun with some extra BBQ sauce on it. They have a nice chew to them due to the vital wheat gluten. I think the liquid smoke is key to getting a bit of a meat flavor. I would definitely make these again should I get a craving.

Holy cow delicious! What I like about them is they aren't the standard air filled cupcakes that come from a mix. They are a bit denser and more moist. Kind of a cross between a cupcake and a muffin really. A cupmuffcake.
I would make these for company, they are that good.
We are heading out to a play soon but I'm having two of these when we get back.

If you haven't tried baking vegan, it's not scary. David can barely heat up a can of soup yet he managed to whip these up.

    The only thing scary about vegan baking is the pounds you can pack on with it. lol. In fact, I credit my exuberance in vegan baking as the reason i initially started slipping from maintenance after losing 50 lbs 5 years ago. I kept it off pretty well until 2 years ago when I went vegan. Ironically, that is when I started gaining weight.

    OK, OK.... the weight didn't REALLY start coming back fast until I found out that Oreos were vegan.... but the homemade cookies and cakes didn't help! lol.

    I only mention as a warning. Vegan baking 'sounds' healthier.... but vegan cupcakes still need to be eaten in moderation. I know you know this, Kevin.... just throwing it out there for others seeing this.

    P.S. Looks delicious! Will have to try them for my next birthday!

    I am going to have to start taking a closer look at these Spark People recipes. Sounds absolutely wonderful what you are eating over at your house.

    You remembered Jack LaLanne. I was a little kid living in California when he swam towing all those boats. There are some real currents out in the San Franciso bay.
