Update--This and That

WOW, what a MARVELOUS time I had in Brookings, South Dakota! My best friend, Terri, is the BEST hostess ever! I was greeted with hugs and kisses, brought to my beautifully decorated private room and found wrapped chocolates sprinkled on the bed with a beautiful plaque and a pound of gourmet coffee awaiting my enjoyment! NOW that was just the WELCOME! Every day, after my time in the bathroom, I was greeted with GIFTS on my bed--a purse holder, a beautiful infuser set, necklace and earrings, and a TREASURED book [with special notes from Terri throughout] called "True Friend". And the MEALS! Mmmmmm! Grilled Chicken stuffed with asparagus, grilled steaks, grilled salmon, shish kabobs w/gazpacho, salads, and ALL the fixin's! WONDERFUL!!!

I went for a bike ride with Bobby one night on the tandem [Terri couldn't come because of recovering from knee surgery]-- was that ever fun!

Daily walks with Lassie--their beautiful Irish Setter. SHOPPING, drinking coffee, more SHOPPING, more coffee!

One afternoon we went to the BEST consignment store in Brookings called the Country Peddler where my friend helped me decorate my bedroom wall, and decide on a new theme for my kitchen--coffee theme. We got the BEST deals! I treasured every single minute with Terri!

Went and got bulk honey--I was scared of all the bees but my friend LOVED every minute of it! They used to harvest their own honey.

Went to a REALLY fun restaurant for lunch one day called Market Day {i think I'm remembering that right}

Our hubby's got to spend quality time together too.

As for my Metabolism B diet, my mother and I are doing SO, SO WELL! Monday will start week 3. I'm not craving carbs whatsoever! I mean this is HUGE! I'm definitely a carb-addict and yet I have NO cravings whatsoever! Haven't had more than 5 'counter carbs' every 5 hours for almost 2 full weeks and I cannot tell you how amazing I FEEL! Not just physically with less aches and pains, but EMOTIONALLY, I feel like a new person! BTW, there are TONS of veggies and nuts, etc. that have carbs but these are low-glycemic carbs that don't spike ones blood sugars so we can unlimited amounts of those. Last night while watching the RNC, I ate 1 oz of pistachios, some cherry tomatoes and 1/2 avocado [during Mitt Romney's speech] and I was so incredibly satisfied! And this really was my supper! ha!

Yesterday, my dh stopped at McDonalds for a snack. I was hungry for some protein so I decided to get the grilled chicken club [no bun and extra romaine leaf to wrap my un-wich]. It consisted of grilled chicken, mayo, slice of tomato, lettuce and a slice of swiss cheese. And if you can believe this--made the sandwich go from 47 carbs to 4 carbs JUST by ditching the bread. I also had an iced coffee and couldn't finish my coffee and was still so satisfied at supper that Dennis ordered a taco pizza, and I waited until later and had the nuts, and veggies for a snack. SO enjoyable and satisfying!

This morning I was faced with a hotel breakfast. On our way to SD, the Country Inn and Suites had scrambled eggs, string cheese, hard boiled eggs, peanut butter [albeit w/sugar], bacon, etc. However, at this hotel, ALL I could find to eat was bacon. No hard boiled eggs. No string cheese. NOTHING else I could eat. So I brought the bacon [I won't make a habit of eating bacon] and coffee back to my room. I got my low carb tortilla, smashed 1/2 an avocado on top, cut 5 cherry tomatoes and topped it with the 2 slices of bacon. YUM! It was so delicious! SO thankful that I traveled with my 'stash' and that my dear husband brought our 'plug in' cooler for cheese and the like. :-)

I'm THRILLED as we head to week 3 and finding I'm enjoying this plan MORE every day! As a side-note, my mother is doing FANTASTIC! She called and said, "I KNOW I'm not supposed to weigh, but I just couldn't help myself because my clothes are fitting so differently" and then she went on to tell me she has gone from 155#'s to 148 since we started! She is SUPER motivated to continue!

And the ICING on the cake--no bloating, flatter stomach, and I bought a skort while in SD--SIZE 4! Wooohoo! My 4's had NOT been fitting! This was very encouraging!

So even though I haven't probably lost any weight, I'm DEFINITELY losing inches!

Finally, this one is REALLY big for me! I love Mexican food and can usually help polish off 2 baskets of chips. Last night my husband and I were going to have Mexican but I was too full from the McD's snack. Anyway, today we stopped for lunch at a Mexican food restaurant, and they brought us the basket of chips. I had NO inclination for the chips!

I ordered the lunch fajitas, and asked for extra lettuce in place of the beans. I had a nice moderate size plate with lettuce and cheese, added my grilled steak, peppers and onions. A tad of sour cream and guacamole and a little salsa. It was a meal fit for a king, and I FELT SO delightfully satisfied! Never once missed the chips or the tortillas or beans! AND I have another meal's worth of fajita fixins for supper! :-)))

Thank you to everyone for letting me ramble, but I just feel SO happy that God led me to this plan! I'm SO thankful that we aren't all carbon copies! Each of us is unique and must find that 'just right' option that works with **our** bodies.

P.S. I wanted to confirm again that this diet is temporary--only 8 weeks, and then we gradually start adding fruit and other complex carbs, and finally move to step 3 where we eat 30-35% of our calories from carbs. I think this is very balanced.

    Hey you!!! I am finally back, and I have to admit, I am going to try that Avocado, bacon (turkey bacon), tomato, combo on a low carb wrap!!! I am loving me some Avocado!! I am trying to get back to REAL food, but watching the carbs. My A!C is high again, so I have to try to lower my carb consumption.... Your Pics are fantastic!!     Dear Susan, I want to become the kind of wonderful host your friend is! You are obviously just as awesome as a friend for her to lay out the red carpet! I am so glad to hear how well you are feeling with your new eating plan. I did South Beach four or five years ago and it is similar to what you are doing. After two weeks I craved nothing bad for me. I lost 45 pounds over the next six months. It too graduates you back to eating healthy. Then menopause hit and I have gained it all back! Then I found Spark and working to get back to my goal weight again! Thanks for such inspirational blogs!

    Love that the low carb thing is working for you. That is how I lost the bulk of my weight. emoticon I did have to add some whole grains over time to flush the cholesterol out of my body but I am back to eating lower carb for a season. It is the way that works best for me. I say that but I do eat fruit now and before I did not because I was very strict. emoticon
