So I've been on a roll with creating new recipes.... it's been so much fun following the Eat To Live plan! Hopefully I can keep coming up with fun concoctions that help heal while still tasting good! I have had some nasty creations, don't get me wrong - but that's all part of the fun of playing in the kitchen :)
A cool, rainy morning, this warm "cereal" dish was just right!
Warm Nectarine Breakfast:
1/2 cup unsweetened almond milk
1/4 cup oats (I prefer steel cut oats)
1 Tbs raisins
2 nectarines (Peaches would be a fine substitute, or many of your favorite fruits!)
1 Tbs ground flax seeds
cinnamon to taste
1. Put almond milk, oats, and raisins in a pot, and put over low heat about 10 minutes. You can add water if you prefer more liquid. This lets the raisins and oats soften. Keep and eye on it so it doesn’t burn, while you cut nectarines in to bite-sized pieces.
2. Add nectarines and continue heating another 10 minutes, until fruit is soft and tender, but not mushy
3. Remove from heat and let cool slightly. Pour into serving bowl and add ground flax.
4. Add cinnamon to taste and enjoy!
