Chicken Parma with Mushroom & Broccolini Stir Fry
Well the shock of the weight gain has showed me just how easy it is for fluid to build up in your body if you are not consuming enough water.
Weighed myself this morning before embarking on Week 4 Day 3 of C25K and I have already lost 1.1kg in just over a day buy boosting my water intake again. ( I must of went to the toilet about 10 times yesterday) So nearly back to where I was before the dreaded flu.
Last night it was just Cowboy and me for dinner so I whipped this up after I got back from the gym - yes I told you I would go after work!!
After I had stuck all the ingredients in the SparkPeople Nutritional Calculator I was surprised with the outcome - only 505 Cal (2121 kj). I was really full afterwards and still hadn't eaten my total calories for the day.
I will have to admit this is not the best picture but I was hovering over it waiting to devour it.
All ingredients were purchases at Woolworths
2 x Steggles Chicken Breast Fillets Lightly Crumbed (in the meat section)
25 g Perfect Italiano Pizza Plus Light Cheese
50g Leggo's Parma Sauce
Cook the chicken breasts in the oven per packet directions.
Then in the last 8min take them out spoon over the sauce and top with the cheese.
Back in the over to warm the sauce and melt the cheese.
Stirfry Mushroom & Broccolini
100g sliced swiss brown mushrooms
75g broccolini cut in bit size pieces
1 sliced garlic clove
1" piece of fresh ginger sliced
1 tbsp of oyster sauce
1/4 cup of beef stock
Canola Oil Spray
Spray pan with canola oil
Fry off ginger and garlic
Add mushrooms and broccolini
All beef stock and oyster sauce and stir fry until cooked.
Total of the meal - these ingredients are for one serve
505 Cal - 2121 kJ
33g carbs, 20g fat, 51g protein
