Sushi and Exercise

So, on Sunday, I went for a walk...I ended up walking for just over an hour - 5.5 KM!! So at least now I know I can walk a 5K even if I can't run it yet LOL. I did Day 1 of week 2 for the C25K on Monday. It was harder than Friday since the running time was increased; but it was definitely better than last Monday's workout where I almost felt sick. It was hard, but it felt so good to be able to push through and come home with the good-tired-sweaty feeling. YAY :) Today, I went for a bike ride, just over an hour again. My bike riding GPS says that I went almost 9 miles!
After getting back from my bike ride, I made sushi for the first time...and it was AMAZING! I made it with brown rice, smoked salmon, avocado, and cucumber. OMG, it was so good :)
I don't know WHAT possessed me to make sushi...I don't even like it that much. Maybe the same thing that possessed me to sign up for the 5K run LOL. Anyway, I got the idea last week to try to make brown rice sushi. So, yesterday, I bought the necessary ingredients: short grain brown rice (you have to use short-grain and we only had basmati), nori, avocado, and smoked salmon. And a bamboo sushi mat. It was actually a lot easier than I thought it would be. And tasted a LOT better. But then smoked salmon is an amazing food, and anything with smoked salmon would taste good. The salmon was expensive and high calorie - $10 and over 600 calories for 200 grams! But it's oh so goooood. Oh, and if you're wondering why I'm eating fish when I'm vegan...my parents and I have decided to include fish and seafood in our diet. So I guess that makes us strictly not vegans, but we're not pescetarians either, so I don't know what we are LOL. The thing is fish and seafood is a large part of some of the healthiest cultures on earth and provides lots of good macro and micro nutrients. The Japanese, for example, are probably the healthiest culture on earth, and they eat seafood.
