Day 23 - Mac and Cheese!

I'm treating myself to good old, out of the box, mac and cheese tonight, and a Blue Moon. Ok seriously, I had a really good day nutrition wise, I want to share.
Breakfast: 1/2 cup 1% cottage cheese, 1/2 cup raspberries, 2 cups coffee w/ skim milk and 1 tsp sugar
Lunch: 1 serving pita chips with 2 tbsp roasted garlic hummus, 1 large granny smith apple, 1 low fat string cheese, 8 oz V8 V-Fusion
Snack: 9 baby carrots (1 serving), 1 oz Greek yogurt with ranch
Pre-Dinner: 2 cups Caesar salad
So ok, whoa. I count THREE servings of fruit and THREE vegetables! Yeah, I'm heavily relying on that V8 (packs in a full fruit and a full veggie), but whatevs. Three weeks ago I was eating exactly ZERO fruits and ZERO veggies per day. Plus I've had about a bucket of water, I've walked several miles around campus, I did a cardio video, and I did my Day 2 bootcamp vid.
So with up to 860 calories left in my day, I'm enjoying a bowl of Kraft mac and cheese. Not the whole box! As soon as I made it (and mixed in that super appetizing cheese powder), I put half the box into a tupperware, before I even scooped out any for my dinner. But now I'm enjoying my favorite, favorite food, as well as my favorite beer, without the guilt.
Even if I don't lose a pound, my SparkPeople program is awesome because I can see on my computer screen when it's not ok to indulge, and even better, I see see when it IS ok to do just that.
So here's to mac and cheese and Blue Moon, and to no reason to feel guilty about it.
