Since DH and I had not had any pasta for some time we decided that would be a good Sunday evening dinner. So I sauteed 4 small (7 inch) zucchini with onion, garlic, lots of red, orange and yellow peppers, and plenty of herbs in a little olive oil. Had a lot so set half the veggies aside and added one quart spaghetti sauce to the other half.
Then cooked whole grain thin spaghetti, topped it with veggie sauce and shredded mozzarella cheese. It was delicious and we never missed the meat!
Then I realized that every ingredient (except cheese) had come from Aldi's where I have recently learned to shop (we now have a new store near us) and I think their pasta sauce is the most natural I have ever tasted. I no longer make my own.
