Lowfat Eggplant Parmesan

I have been doing lots of camping and not very diligent in posting CSA updates. Well, this week we were inundated with Eggplant. So, searching spark for a lower fat recipe, I found this one

I made it for dinner and it was very tasty. It browns nicely in the oven and gets crispy and the middle even stays tender. Easier to clean up too compared to frying in oil and then baking.

the recipe suggests turning the breaded eggplant over however, I highly recommend it so that both sides are crispy. the only thing that I would have liked a bit more clarification on, is the eggplant size. It does state large however, that is relative to each individual or perhaps a piece count.

other than that, I recommend this recipe. emoticon
