Fast and Easy Meals!

Sorry, nothing I do is fast or easy! While watching today's SparkCoach video I had to laugh cause Becky Hand is going on about doing these quick and easy meals for your family in just minutes. She had it right as far as having a plan. You have to know what you are going to make all week long! You need to sit down and make that grocery list out so when you get to the store you're not wandering, aimlessly ending up in your TRIGGER SECTION!
When you fail to plan you plan to fail!
As I said earlier I can never do anything fast and easy! However, I can do BATCH! That is something I have learned since SPARKPEOPLE! We took one of Chef Meg's makeovers called Slow Cooker Marinara Chicken and Vegetables. I changed it slightly. Increasing amounts and changed the marinara to thick and chunky salsa. Mine is more of a thick soup. Well, Becky (Thoms1) and I love this recipe! It is so filling! That is what we need for dinner something to fill us up and it tastes so good! Of course we also have something to accompany the soup. I have made this for at least 4 or 5 weeks in a row! It doesn't have a chance to get into the freezer!
Another go to recipe is my Veggie Chile. It has taken years to perfect! I went from ground beef to ground turkey and finally talked Becky into letting me make it without meat! She was kicking and screaming the whole way but loves it! I would make a huge batch and only have the one pound of meat in it. I figured we wouldn't miss it anyway. I use dry black beans and dry kidney beans. I was trying to lower the sodium in it. Now I am trying to eat at the lower end of my Carbohydrate range as recommended by Spark people (152-276) so I have cut myself down to 1/2 Cup of Chile for lunch along with a cup of Roasted Veggies or a cup of Eggplant zucchini yellow squash casserole. That is another recipe I make in a big batch. Of course none of these recipes would be doable with out Chef Meg's Herb Roasted Tomatoes!
I no longer use canned tomatoes unless in an emergency! My sodium intake must have been astronomical before!
I never really thought much of making out menus before spark. Everything was just sort of thrown together. I like it much better now. Is that the controller in me coming out? In my former life I was a Radioman in the Navy and worked at Communication Stations usually in radio in the technical control area. I was a technical controller! Learning how things worked and being able to ensure they continued to work or got them fixed by the experts. Much like in my current life come to think of it. I have come to Spark People to get me fixed. Spark People you are doing a great job! Keep up the good work!
By the way! I tried out SparkCoach free for the two weeks and I would encourage any one of my fellow sparkers to give it a shot especially since it is a free two week trial. As I was going through it the first day I thought What! This is taking me back to day one of spark! Guess what maybe that is where we need to be occasionally. I signed up for three months. I will be going on VACA from the beginning of Sept until sometime in Oct! I decided that I might need a little bit of extra help since my diet and exercise buddy (Thoms1) won't be going with me! BooHoo! Of the two of us she is the strong one! I cave in really easily so I am hoping my SparkCoach will be kicking my butt along the way!
